Question about PCIe connectors?

My graphics card requires two 6-pin PCIe connectors but I only have two 8-pin to 6+2-pin connectors.

If I plug the 6+2-pin end into my graphics card and only plug-in the 6-pin part, leaving the 2-pin piece disconnected, and plug the 8-pin end into my power supply, would this be the same as a 6 to 6-pin PCIe connector?

Yes you can plug the 8pins into the power supply and just the 6 pins of the 6+2 into your video card. Those cables were made to do that so power supply manufacturers didn’t have to include a 6pin and an 8pin cable to account for the different PCIe cards.
